This limited release of only 11 bottles has been meticulously crafted by our esteemed winemaker, Roman Roth, marking a momentous occasion in our winemaking history.

Roman Roth, using the méthode champenoise, has carefully aged our sparkling wines on tirage (on the yeast) for 3 years before disgorging. The 1997 Recently Disgorged Sparkling Wine Extra Brut, having spent an unprecedented 26 years on the lees, promises a night of unparalleled richness and complexity. Vibrant and lively, with an elegant mousse, this wine features roasted notes and evolved fruity citrus flavors. Each of the 11 bottles has been individually dipped in vibrant blue chrome paint by the talented Joe Badilla of Badilla Painters, ensuring a visually stunning presentation.
