Paul Brooke Unveils Montauk Wild Oysters Co. Oyster Shucking Experiences

Local waterman Paul Brooke has launched Montauk Wild Oyster Co., featuring oyster shucking experiences with pairings, as well as retail and delivery services in the Hamptons.

During a Montauk Wild Oyster shucking experience, guests discover the world of Montauk oysters with Brooke. They can learn how wild shellfish grow and master the art of oyster shucking, or they can sit back and enjoy freshly shucked oysters prepared by Paul himself. The oysters are paired with condiments for a full-tasting experience.

The experience includes freshly harvested Montauk oysters served chilled over ice; gourmet accompaniments, including sliced lemons, cocktail sauce, horseradish, and Tabasco for a balance of flavors; an oyster shucking tutorial with hands-on instruction on the art of shucking, complete with a safety glove and oyster knife; and a presentation that includes a white linen-draped shucking table adorned with coastal-inspired decor.

Born and raised on Long Island, Brooke has over 20 years of experience navigating the Atlantic and diverse waters worldwide. His expertise spans shellfishing, fishing, spearfishing, and surfing. Paul holds a commercial shellfishing license, over 10 years of service as an ocean lifeguard, and certification from the American Red Cross in CPR-AED for professional rescuers and first aid. Driven by a lifelong passion for the ocean, Brooke continually deepens his knowledge of weather patterns, marine ecosystems, and ocean dynamics.

His knowledge of Montauk, its nature, and history runs deep. As a child, he grew up spending time alongside family who worked as commercial fishermen in Montauk, and he spent most of his days at the Ditch Plains lifeguard stand, where his cousin and friends watched over the beach. Captivated by Montauk’s coastal beauty, he made it his full-time residence in 2007.

Beyond Montauk, Brooke has explored coastal environments across the globe, including Block Island, Hawaii, California, Florida, Texas, the Virgin Islands, Mexico, Puerto Rico, Nicaragua, Costa Rica, South Africa, Bali, and Thailand. His travels — inspired by a childhood fascination with National Geographic — fuel his ever-growing appreciation for the ocean’s diverse ecosystem, enriching the experiences he curates for those who join him on the water.
