Philippe Chow’s Chicken Satay with Housemade Peanut Sauce | Serves 1 (3 skewers)
INGREDIENTS
- 6 oz chicken breast or thigh (divided into three 2 oz portions)
- 3 oz housemade peanut sauce (recipe below)
- Bamboo skewers, soaked
- Oil for frying
PREPARATION
- Marinate chicken overnight in Philippe Chow’s signature satay marinade
- Skewer each 2 oz portion of chicken
- Heat fryer to 350°F. Fry the skewers for 4 minutes until golden and cooked through
- Remove and drain excess oil
- Ladle 3 oz of hot peanut sauce over the skewers
- Plate, garnish, and serve immediately
PHILIPPE CHOW’S HOUSEMADE PEANUT SAUCE
Yield | Approx 1 gallon
- 4 quarts heavy cream
- ½ cup granulated sugar
- ½ cup salt
- 0.5 oz housemade hot chili sauce
- 5 packets Satay Seasoning
METHOD
- In a large wok over medium heat, combine heavy cream, sugar, salt, chili sauce, and satay seasoning.
- Bring to a low boil. Reduce heat and simmer for 70 minutes, stirring regularly.
- Sauce should thicken to a rich, smooth consistency.
- Keep hot and stir continuously during service using a small hand mixer to maintain emulsion.
