Recipe: Philippe Chow’s Chicken Satay With Housemade Peanut Sauce

Philippe Chow, an upscale Chinese restaurant serving Beijing-style cuisine in New York City, is known for many favorites that put a unique spin on traditional Chinese dishes. Chow’s most iconic dish is the signature Chicken Satay with housemade peanut sauce, which is also approachable for at-home chefs.

Philippe Chow’s Chicken Satay with Housemade Peanut Sauce | Serves 1 (3 skewers)

INGREDIENTS

  • 6 oz chicken breast or thigh (divided into three 2 oz portions)
  • 3 oz housemade peanut sauce (recipe below)
  • Bamboo skewers, soaked
  • Oil for frying

PREPARATION

  • Marinate chicken overnight in Philippe Chow’s signature satay marinade
  • Skewer each 2 oz portion of chicken
  • Heat fryer to 350°F. Fry the skewers for 4 minutes until golden and cooked through
  • Remove and drain excess oil
  • Ladle 3 oz of hot peanut sauce over the skewers
  • Plate, garnish, and serve immediately

PHILIPPE CHOW’S HOUSEMADE PEANUT SAUCE

Yield | Approx 1 gallon

  • 4 quarts heavy cream
  • ½ cup granulated sugar
  • ½ cup salt
  • 0.5 oz housemade hot chili sauce
  • 5 packets Satay Seasoning

METHOD

  • In a large wok over medium heat, combine heavy cream, sugar, salt, chili sauce, and satay seasoning.
  • Bring to a low boil. Reduce heat and simmer for 70 minutes, stirring regularly.
  • Sauce should thicken to a rich, smooth consistency.
  • Keep hot and stir continuously during service using a small hand mixer to maintain emulsion.
