Pastry Chef Gabriela Amelunge from The Betsy Hotel South Beach shares her recipe for Almond Coffee Cake.
Ingredients
360 grams butter
360 grams sugar
Zest of 4 lemons
1/4 tsp almond extract
7 eggs
260 grams all-purpose flour
100 grams almond flour
1 Tbsp baking powder
6 Tbsp buttermilk
Directions
In the Kitchen Aid bowl with the paddle mix the butter, lemon zest, almond extract and sugar until you get a creamy consistency.
Add the eggs one by one.
Sift the dry ingredients and then mix with the butter mixture, alternating with buttermilk.
Do not mix excessive. Bake at 300 degrees for 30 to 35 minutes.
Almond Streusel
2 c almond slices
1 c sugar
1/2 c melted butter
Mix softly to not break almond slices.
