Rui Costa, the head bartender at Kilkea Castle in Ireland, has created this special drink for the holidays. The Kilkea Winter Flame balances its sweet, sour, and spicy elements with the delicate smoky flavor of Mezcal.
Kilkea Castle is an award-winning luxury hotel resort and golf club in County Kildare, Ireland, 45 minutes from Dublin.
INGREDIENTS
1.35 oz Mezcal
.65 oz Amaretto
1 oz pineapple Juice
.35 oz fresh lime juice
.65 oz house spiced cinnamon syrup (or MONIN winter spice syrup)
METHOD
- Start by chilling your rock glass.
- Fill the shaker with ice, add the ingredients, and finish with pineapple juice.
- Shake vigorously for at least 10 seconds.
- Strain into a rock glass over ice.
- Garnish with pineapple wedge, grated nutmeg for extra heat.
- For a “wow” effect, add a lightly toasted cinnamon stick, heated with a blowtorch or long-handled lighter.
