
Cédric and Ochi Vongerichten, the husband-and-wife duo behind downtown Manhattan’s acclaimed French-Indonesian restaurants Wayan and Ma•dé, return to the East End for their fourth summer and their second consecutive season at EHP Resort & Marina, in Springs. Opening May 21 through September 7, guests can once again enjoy Wayan and Ma•dé’s French-Indonesian cuisine while overlooking Three Mile Harbor.
Set within a 3,000-square-foot indoor space with indoor and outdoor seating for 180 guests, the restaurant offers sweeping harbor views and a vibrant, immersive atmosphere with elements of Indonesian craftsmanship and lush, tropical greenery woven throughout the design.
The menu highlights seasonal, locally sourced ingredients through the lens of Southeast Asian flavors, including Montauk Shrimp Satays with dabu dabu and lime, Mango Salad with cherry tomato, cashew, and lime vinaigrette, and a Krupuk service featuring a selection of sambals. The menu also features Wayan signatures like Escargot Rendang with toasted brioche, garlic-herb butter, and lime, Corn Fritters with sweet chili sauce and scallion, Lobster Noodles with black pepper sauce, Short Rib Fried Rice with fried egg, mushrooms, and peppers, and Warm Chocolate Cookie with mimolette ice cream and cheddar cheese. Ma•dé signatures include Lobster Dumplings with beurre blanc, sambal terasi, chives, Slow Cooked Butterfish with calamansi miso and summer squash, and Fried Chicken with sweet chili sambal and acar.
A lively happy hour program from 4 to 6 PM will be offered, alongside a curated cocktail program with highlights such as Bali Tonic with conniption gin, pineapple, galangal, and basil, Sunset Spritz with campari, sparkling, and calamansi, Devil’s Avocado with derrumbes mezcal, avocado, cucumber, and spicy honey, Mentawai with Casa del sol tequila, cucumber, bell pepper, and cilantro, Sumba Swizzle with rum, guava, and ginger, and Instant Zen, with whiskey, chili, citrus, absinthe, and angostura bitters.
For those seeking a stylish arrival at Wayan & Ma•dé by boat, guests are able to dock their vessels at EHP Marina. From the marina, guests can conveniently walk to the restaurant, which is just a few steps away. Complimentary on-site transportation via golf cart may be available to guests upon request, subject to availability.
