Cocktail Recipe: Bayberry’s Cuban Link

The Cuban Link cocktail at Bayberry in Islip was created as an attempt to quench the heat of a Long Island summer, while also showcasing a more modern approach to creating cocktails. The Cuban link combines modern cocktail techniques, such as fat washing, with the backbone of a classic mojito. The coconut oil wash not only imparts coconut flavor into the rum, but it also adds a more rounded texture that helps balance out the cocktail.

Ingredients

• 2 Oz Coconut-Washed Diplomatico Planas (or your favorite coconut-flavored rum)

• .75 Oz Coco Lopez Cream of Coconut

• .5 Oz Fresh Squeezed Lime Juice

• .25 Oz Agave

• 6-8 Mint Leaves

Directions

• Combine all ingredients into a shaker

• Shake for 30 seconds

• Strain over ice into a Collins glass

• Slap mint to express oils

• Garnish with Mint leaves and a lime wheel

*To coconut wash rum, heat 2.5 Oz of Unrefined Coconut Until liquid, then add to 750ml of Diplomatico Planas Rum and mix the two together. Refrigerate for 48 hours, then skim off the layer of solidified coconut oil and use a coffee filter to remove excess solids.
