Cocktail Recipe: Vallarta’s Tiki Tepache 

Tiki Tepache is a cocktail inspired by ancestral Mexican spirits. Tepache is a traditional Mexican fermented drink made from pineapple rinds, spices, and piloncillo (unrefined cane sugar).

Alex Valencia, co-owner and beverage director of Vallarta in New York City, said, “The inspiration behind this cocktail is passion and dedication combined with my roots as a Mexican. I love to discover new flavors and create a concept that is ‘Mexican Mixology,’ which is the combination of knowledge, passion, culture, great cocktails with unforgettable experiences.”

Tiki Tepache

Ingredients:

  • 1.5 oz Rhum Agricole (Paranubes of Pela Cañas)
  • .75 oz Fresh Lime Juice
  • .75 oz Demarca Syrup
  • .5 oz Curacao (Royal Combier)
  • 3 dashes of Angostura Bitters
  • 3 oz Sazón Tepache

Method: Add all the ingredients into the shaker but the Tepache. Add two ice cubes and shake, then serve with a lot of pebble or crushed ice. Then add 3 oz of Tepache on top.

Glass: Tiki Mug

Garnish: 2 pineapple leaves, a slice of pineapple, and cinnamon dust
