Disset Chocolate Introduces “Ode to the North Fork” Collection; Free Bonbon Samples At Atelier

Disset Chocolate, an artisanal chocolate company and shop on the North Fork, has launched a unique signature bonbon collection.

The Ode to the North Fork is a first-time exclusive collaboration between Disset Chocolate and some of the North Fork’s favorite purveyors, along with a custom illustrated North Fork map, to create an edible journey in chocolate that captures the unique flavors of the region.

From local honey and coffee, to fresh lavender and decadent donuts, the collection is the result of countless hours of testing and tasting by Ursula XVII, a Michelin-trained pastry chef and chocolatier who recently opened her retail shop, Atelier Disset, in Cutchogue.

The Ode to the North Fork collection includes eight beautifully decorated handcrafted bonbons infused with Cabernet Franc pate de fruit from Lieb Cellars; spiked lemonade pate de fruit and white chocolate ganache from Fishers Island Lemonade; dark chocolate ganache infused with Orient espresso from Aldo’s Coffee; dark chocolate with Helichrysum pate de fruit, cinnamon ganache, and a fenugreek praline from Chrysalis Apothecary; bacon, lard ganache, and cacao nibs from 8 Hands Farm; white chocolate ganache infused with lavender from Lavender by the Bay; NoFoDoCo praline, chocolate ganache, and rainbow sprinkles from the North Fork Donut Company; and black duck porter and milk chocolate ganache from Greenport Harbor Brewery.

The collection also comes with a limited edition North Fork map, designed by local chalk artist Kara Hoblin, with illustrations of the bonbons and information about each collaborator.

To make this launch a little sweeter, the first 17 visitors to Atelier Disset every day from Thursday, June 17 through Sunday, June 20 will receive a free sample of two flavors from the collection, along with a copy of a Kara Hoblin illustrated map. All customers can also purchase the Ode to the North Fork at a 10 percent discount.

“The Ode to the North Fork is more than a box of bonbons,” said Ursula XVII. “It’s a tribute – our way of showing love and appreciation for this wonderful community. This collaboration represents months of research with some of the best farms, wineries, breweries, growers, and treats in the region. We’ve captured the essence of each of our brand partners in every flavorful bite. In this edible souvenir of the beautiful North Fork.”

“Doing business on the North Fork has always been a collaborative effort for us,” said James Lyons, owner of North Fork Donut Company. “That’s why working with Disset, Ursula, and all of the other amazing companies in this collection has been such an honor. The talent and craftsmanship that comes out of the North Fork deserve to be celebrated and shown to a bigger audience. We are so proud to be part of this project.”

Carol Festa of 8 Hands Farm adds, “This collaboration was fun, but it was certainly a challenge for Ursula. She took suggestions from six members of our kitchen staff, with lots of feedback, and then incorporated all of those into a new prototype. She managed the process so beautifully, and created a final product that really represents who we are, and tastes delicious – no easy feat.”

It’s no coincidence that the collection is debuting on June 17. Disset means “seventeen” in Catalan, the language of Ursula’s heritage, and the day is associated with many family milestones and memories. Customers can look forward to future launches on the 17th day of a month.
