ISHQ, a casual fine-dining Indian restaurant in the East Village, shares the cocktail recipe for its “Jubilee Affair.” This cocktail draws inspiration from childhood memories of enjoying cookies with chai. Chef Vamshi Adi, hailing from Hyderabad, fondly recalls the popular Irani chai paired with the beloved little heart cookies. This drink captures those comforting flavors, evoking the warmth and nostalgia of his mornings, and represents the best moments of his childhood.
ISHQ’s Jubilee Affair
Ingredients: Rum, Rockey’s Liqueur, Irani Chai, Salted Butter, Fresh Lemon, Milk
Clarification Process
3.5 oz – Clarified Batch
Glass: Rack Glass
Garnish: Little Heart Cookie
Ice: Clear Ice Cube
Method: Stir and Julep Strain
Clarification Batch:
- Rum 1 bottle 750ml
- Rockey’s Liqueur 250ml
- Lime juice 350ml
- Irani chai 750ml (Freshly Brewed)
- Salted butter syrup (Amul Salted Butter 500 gram + Sugar 2 kg + Whole Milk 2 liter)
Step 1 – First, melt the sugar in the butter until it is brown.
Step 2 – Then add milk and mix for 5 minutes on a low flame. Set aside to cool.
Step 3 – Mix the remaining ingredients except lime juice and pour the mixture over the lime Juice to trigger the clarification process. Then, clarify it using coffee filters. (This might take a couple of hours.)
Step 4 – Once the batch is ready, pour it into bottles and store them in the refrigerator. Ready to serve.
