Cocktail Recipe: The Mr. Tony At Paros In Tribeca

Inspired by Paros, a Greek island in the Aegean Sea, brothers George Pagonis, Bravo’s “Top Chef” finalist, formerly of Jose Andres’ Zaytinya, and Kyma, and Nicholas Pagonis have opened Paros in Tribeca.

“The Mr. Tony is named after George and Nick’s father who they used to work for at their family diner in Alexandria, Virginia. He is a fan of figs and whiskey so we created a twist on a classic old fashioned with homemade fig syrup. In our recipe we use black walnut bitters to compliment the figs with nuttiness on the finish. We add just a touch of oloroso sherry to round out the finish, cut the sweetness and add a touch of salinity,” said William Fell, the Beverage Director at Paros.

Recipe

    • 2.5oz Old Forester bourbon
    • 5 dashes walnut bitters
    • .75oz homemade fig syrup
    • .25oz Lustau Oloroso Sherry
    • Stir and pour on large rock
    • Dried fig garnish
