From Pop-Up To Permanent: Camp Rubirosa Becomes An Annual Summer Tradition In East Hampton

After a successful debut season on the East End, Camp Rubirosa, presented by Resy, has announced it will return to East Hampton each summer, now becoming an annual tradition on Race Lane. The goal was to capture the food, spirit, and energy of Rubirosa Ristorante on Mulberry Street and translate it into a summer ritual for the Hamptons.

What began as a seasonal pop-up became something more meaningful: a place families returned to week after week. Large tables under the stars. The long outdoor bar buzzing at sunset. Sunday Suppers that punctuated a perfect weekend at the beach. Now, co-founders Maria Pappalardo and Brian Bedol are committed to bringing that camp spirit back each year — preserving what guests loved while continuing to evolve the experience.

“Camp is about coming back,” said Maria Pappalardo. “It’s about that feeling when you walk in and everything feels familiar — the energy, the smells, the music, the food — and yet there’s something new waiting for you. This summer, we watched families create real traditions. That’s when we knew this had to become annual.”

“The best camps are the ones you go back to every year,” said Brian Bedol. “You know the songs. You know the traditions. But every summer adds new stories. That’s what we’re building here — something that feels timeless but never static. In a world overrun with technology, friendly, in-person experiences are more important than ever.”

The dining room, anchored by a freestanding brick fireplace, flows into Ciao Hall and out to The Piazza, where the spirit of the downtown restaurant meets summer camp nostalgia. The menu honors Rubirosa classics while leaning into seasonal ingredients and playful touches that make the East Hampton experience its own.
