Ingredients (Serves 4)
8 ears of corn (shucked)
4 Tbsp butter at room temperature
2 Tbsp crème fraîche
2 Tbsp olive oil
1 Tbsp mayonnaise
1/4 c grated parmesan cheese
1 Tbsp lemon zest
1 Tbsp salt
1 Tbsp black pepper
1/4 c chopped cilantro
1 tsp cayenne pepper
1 tsp cumin
1 tsp curry powder
Directions
Begin by heating the grill to medium heat. A gas grill should be set around 350 to 375 degrees.
Place the shucked corn on the top roasting rack of the grill. Mix all other ingredients together in a bowl until thoroughly incorporated.
Brush the buttery mixture over the corn and shut the grill cover. Rotate and brush corn with cilantro butter every three to four minutes for 30 minutes. Enjoy.
